We made dragon’s beard candy a couple weeks ago. The process is similar to pulling noodles, except you end up with a lot more strands of sugar than noodles. 2^14, or 16,384 strands to be exact (assuming you don’t break any by accident). You start out with a puck of sugar/corn syrup, poke a hole in the center, make a sugar hoop, then cross the hoop over itself and into a figure 8. Fold the figure 8 onto itself so it is two smaller hoops. Stretch them wider, then repeat everything I’ve said 14 times. Eventually you get such fine strands of sugar, it starts to resemble a dragon’s beard.
